Blogging Instructions for Commercial Cooking

The foods labs (prepared both at school and at home) during the previous week are always due on the following Monday. 


Late blogs will be marked according to the policy found in “Assignments” found on the Course Outline.

  • Something you have learned in class that is important to the recipe - 1 point
  • Detail to your reflection - 1 point
  • Spelling and grammar - 1 point will be deducted from the total mark for spelling errors and grammar mistakes.

  • 1.         Copy and paste a photo of your recipe unto your blog – 1 point

    2.         Find the recipe on my blog and copy and paste it onto your blog – 1 point

    3.         Reference your recipe.  If I am giving you the recipe, the source will be cited below the recipe – 1 point

    4.         Write a reflection (one paragraph) about your cooking experience. Answer the following in your reflection.

    • what went well - 1 point
    • what did not go so well - 1 point
    • what you would do differently if you were to make this recipe again - 1 point
    • Something you have learned in class that is important to the recipe - 1 point
    • Detail to your reflection - 1 point
    • Spelling and grammar - 1 point will be deducted from the total mark for spelling errors and grammar mistakes

    Exceptional example

    So when I heard we were making a “Healthy Snack” I was a tiny bit confused. For one, I had never heard of the word “healthy” before, and when I did comprehend it’s meaning I was awestruck. Why would someone spend all this time preparing food to make you healthy, when you can go to your local McDonalds and eat the food that lasts forever! When I mean forever, I mean it stays in your stomach long after your dead. Now that I have exhausted my sarcasm meter, I will get to the point. So as always, we had some pros and cons in this mighty endeavor. What didn’t go so well was that my group consisted of only two people, including myself. This lack of manpower delayed much of our work and was rather annoying. What went well was that we were able to finish our assignment to its full extent before the bell rang, despite our group’s small number. If I could change something from this past event, I would be sure to find some way to gather extra workers so I wouldn’t have to do so much work and save time. What I learned mainly was how to fit recipes into servings according to the Canada Food Guide. Through this I can determine the quantity of foods I need to get the proper daily servings for my age. This would be a healthy snack simply because of what it is made of, as all of the main ingredients are healthy excluding the chocolate chips.


    Average Example

    This week we made a breakfast in cooking. We made Quinoa and some people thought it was gross but I actually thought it was really good. We used our time wisely and did our jobs that were assigned off the board. Although it may have been because the recipe was very quick, we were done with plenty of time left. One thing we did wrong was we put the oatmeal in before the quinoa was cooked. Also, we put the flax in with the oatmeal but I don't think that made a difference. So in the end, the quinoa was uncooked but it still tasted pretty good to me. If I were to make this again I would obviously make sure the quinoa was cooked before adding the other ingredients. The main thing I learned this class is how important it is to read the recipes carefully so you don't miss any instructions!
